Makes enough for 10 guests

To make the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Drink (yields 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Method

To prepare the Cordial: Place every items inside a saucepan, heat until it reaches a gentle boil, mixing to dissolve. Then, turn off the burner allowing it to cool down entirely. Transfer to a sealable bottle, seal and refrigerate it chilled, it can be stored for about one month.

For the Premix: Combine all the spirits and syrup in a big jug, let it rest for an hour, then filter it best through muslin, making it completely strained.

When ready to serve: Measure 85ml from the cocktail base into your mixing glass containing ice, and agitate carefully for a minute until cold. Pour to a cold coupe glass or equivalent, decorate with some cranberries and finish using a light spray of the essential oil over the top.
